Since today is Cinco de Mayo, it makes sense that we talk about all the things we love about Mexico and Mexican culture. Did I ever mention that tequila makes me happy? Maybe not for breakfast…. but still, I will look forward to some later tonight. I am on the road today, so while la gata is away, the NewsViews mice will get to play without me. Be kind.
Today’s Topic:
Cinco de Mayo commemorates the Mexican defeat of the French forces at the Battle of Puebla in 1862, when about 2,000 Mexican soldiers turned back 6,000 French soldiers and the French Emperor Napoleon III.
Today Hispanics see it as an excuse for Americans to celebrate all things Mexico — the drinks, the food, the music, the dancing. But at the heart of Cinco de Mayo is a celebration of strength and solidarity.
I’m there for it.
How will you commemorate Cinco de Mayo?
While huddling around the coffee mug, will you sneak in a half ounce of Kahlua coffee liquer and a sploosh of whipped cream? A breakfast burrito, huevos rancheros? Chorizo?
Or later, a margarita or a Mezcalita?
A Mezcalita is made with a spicy rim of salt and chili powder after a lime wedge is rubbed to help it stick.
Essentially you flop the orange juice and lime juice so the orange is the standout — 2 oz. of fresh OJ and 1 oz. of fresh lime juice, 1 1/2 oz. Mezcal, and fresh lime wedges for garnish.
What’s in your favorite tacos? I’ve discovered a spicy baja seasoning for fish is easy and delish in the air fryer, of course with all the fresh toppings.
Street corn? Quesadillas? Mexican black bean salad?
