It’s 5:00 Somewhere

Sunday brings Father’s Day, in case anyone has forgotten.

My hope is that each of us has something to celebrate about Father’s Day.

You may be one, or you may have parented in another sense. You may have one, you may have lost one, or perhaps you think or thought of someone in your life as a father figure. Maybe you gave birth to one, or adopted one.

Whatever brings you to celebrate Father’s Day, it’s my wholehearted wish that you find an air-conditioned way to do it. I’ve spent many Father’s Days manning (har-har) the grill, but in heat and/or humidity, I urge you to put down the barbecue tongs this weekend, and think outside the box — and keep something chilly in the ice-box. No steaks at our Father’s Day feast this Sunday, I’m doing my hubby’s favorite — tacos. And Hot Fudge Brownies a la mode may be the expected and traditional dessert of the day, but I’m thinking outside the oven.

I found this great idea.

AIR FRYER CHOCOLATE CHIP COOKIES

Yep, no oven for this girl!

  • 1/2 cup unsalted butter 1 stick, melted
  • 1/2 cup brown sugar
  • 1/4 cup white sugar
  • 1 egg at room temperature if possible
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • ¼ tsp salt
  • 1 cup semi-sweet chocolate chips

Chill for at least 30 minutes or overnight. Line the bottom of your air fryer with parchment paper. You should be able to fit 2-4 cookies depending on the size of your fryer basket.

Note: the writer suggested at this point rolling balls of cookie dough and placing in a freezer bag up to a week if you aren't baking the entire batch at once.  Not a bad idea to have fresh homemade cookies another day in only 10 minutes!

“Bake” at 325 degrees for 5-7 minutes, and allow to rest in the air fryer for 2-3 minutes before removing. Crispy on the outside, chewy on the inside!

My husband always says that chocolate chip cookies and beer go great together, but whether you choose a frosty mug of beer or milk, raise your glass with me to the fathers in our lives, including those here at NewsViews!
