Peaches are everywhere at my house. All from one tree in my back yard. They’re on my patio, they’re on the kitchen counter, they’re in baskets, they’re in bags. Manna from the peach gods (that’s what my husband said as they were falling on his head while mowing the lawn yesterday).
I’ve frozen peaches, I’ve made jam, I’ve made cobbler. 2020 has sucked, but the peaches are still sweet.
Today, I’m making something with booze and a blender. Are you with me?
I always have tequila in the cupboard. A couple of peeled and pitted peachy gems ought to be enough. Whizzed in a blender with some lime juice, triple sec, tequila, and honey. Don’t forget to salt the rim!
My next thought might be Rumchata and fresh blended peaches. What if I added a dose of vodka? Or cinnamon whiskey? Some frozen peach slices would add a nice chill. Hmmm….
My Italian friends here probably could tell me about a Peach Bellini. Make a peach puree in a blender with lemon juice and sugar to taste. I’d probably strain this to remove any pulp, pour into a champagne flute and top with Prosecco or a dry sparkling wine or champagne. Cin cin?
